You shouldn't drive an uninsured vehicle, no matter what. When you get to NY, contact that agent and give him the VIN no. and any other information he requires, and just get a low-end policy [PL/PD] to cover you until you get back home again. You can get a car insured pending the tag & plate registration, depending on what your state requires. But in the meantime, you're covered with the basics...you can upgrade thru the same company once your home again.
